We are excited to announce that we have collaborated with Well-Fed to offer a FREE four week slow cooker course! Learn how to eat well for low cost in a fun, friendly session. Places are limited so please ask your PA for further information or to book. The courses will be on Thursdays 6th, 13th, 20th and 27th April from 1.00 to 2.30 pm in the @20 Hub, Station Road, Colwyn Bay.
Everyone taking part receives a FREE slow cooker and fresh ingredients each week.
To get you started, here are two great slow cooker recipes – healthy, hearty and filling that will keep you warm on cold days. Both are tried, tested and enjoyed by the young person who sent them in!
Lob Scouse
What you need for 2 people:
About 350g diced beef
Chopped potato (can leave the peel on if washed well, this is high in iron), usually 2 for 2 people
Chopped carrots (same as potatoes with the peel if wanted), usually 2 for 2 people
Frozen or tinned peas,
Frozen or tinned sweetcorn,
Diced swede (frozen or already chopped is easier as it can be very difficult to cut a fresh one)
2 beef stock pots and 2 vegetable stock pots (I use Knorr ones)
What to do:
Put all ingredients in slow cooker and add boiling water then set on low for 5 hours – the longer the better really. About an hour before dinner set the slow cooker to high. Optional: add gravy granules at the end to thicken the broth. Add salt and pepper as desired.
Without the gravy granules this dish is gluten free, also this dish is suitable to people allergic to dairy. Also suitable for onion allergies with out the gravy granules.
Roast Beef
Use a roasting joint – any will do. Add 2 beef stock pots and 2 vegetable stock pots. Add boiling water till fully covered, plus peas, salt and pepper if desired.
Add gravy granules at the end to make your own gravy.
Cook for 5 hours or as long as you can on low then an hour before dinner turn the heat up to high.
